Zenon Wierzbicki

Zenon Wierzbicki is the new vegan chef at the Forum Café located in Trinity Business School. 

He came to us from the very popular Blazing Salads restaurant in Dublin.  He only cooks vegan food and has seen a serious rise in demand for his dishes.  Zenon says that since January, he has had to double and sometimes quadruple food production as demand grows.

He says students are big fans of his comfort food like the vegan mac and cheese.  They love the noodles, pasta and vegan burgers as well.  Zenon draws inspiration from vegan magazines, cookbooks and adopts popular meat recipes sometimes as well.  His creativity helps him keep it interesting and it is paying off.  The forum regularly has students and staff alike queueing for his food before it runs out.

One of the main draws is the fact that Zenon can sell a vegan burger for €4.60 that would go for over twice that amount at outside restaurants.  Students and staff are getting great value for money with his offerings.  In fact, Zenon says that Provost Linda Doyle was a big fan of his vegan lasagna!

He's enjoying working with his new team in Trinity catering. Damien, the head chef, is very supportive of him being creative and keeping it interesting with the vegan dishes.  Head down to the forum, say hello to Zenon and try some of his delicious vegan dishes!
